Ingredients
  

  • 3 cups of Einkorn flour whole grain or all-purpose
  • 1 packet of active dry yeast
  • 1 ½ teaspoons of salt
  • 1 tablespoon of honey or sugar
  • 1 cup of warm water about 110°F
  • 1 tablespoon of olive oil optional for added richness

Instructions
 

  • Activate the Yeast: In a small bowl, combine warm water and honey (or sugar). Stir in the yeast and let it sit for about 5-10 minutes until the mixture becomes bubbly and frothy.
  • Mix the Dry Ingredients: In a large mixing bowl, combine the Einkorn flour and salt. Mix well.
  • Combine Wet and Dry Ingredients: Once the yeast is activated, pour the mixture into the flour bowl. Add the olive oil (if using) and stir until the dough begins to come together.
  • Knead the Dough: Turn the dough out onto a floured surface and knead for about 5 minutes. Einkorn dough can be a little stickier than regular dough, so feel free to add a bit more flour if necessary. The dough should be soft but not overly sticky.
  • Let the Dough Rise: Place the dough in a greased bowl and cover it with a clean cloth. Let it rise for 1-2 hours, or until it doubles in size.
  • Shape the Dough and Bake: Preheat your oven to 375°F (190°C). Punch down the dough, shape it into a loaf, and place it in a greased loaf pan. Bake for 30-40 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
