Instructions
 

  • Preheat oven to 400°F (200°C) and grease a baking pan or cast-iron skillet.
  • Mix dry ingredients – In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  • Whisk wet ingredients – In another bowl, beat eggs, then add milk and melted butter.
  • Combine the mixtures – Gradually mix the wet ingredients into the dry ingredients. Stir until just combined (do not overmix).
  • Pour into the pan – Spread the batter evenly in the greased pan or skillet.
  • Bake for 20-25 minutes – Until golden brown and a toothpick inserted in the center comes out clean.
