- Biscuit Layer:
- 1 can 16 oz refrigerated biscuit dough
- Beef Layer:
- 1 lb ground beef
- 1 medium yellow onion diced
- 1 bell pepper red or green, chopped
- 1 packet taco seasoning
- ½ cup water
- Creamy Layer:
- ½ cup sour cream
- ½ cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 can 4 oz diced green chilies (optional)
- Toppings:
- 1½ cups shredded cheddar or Mexican blend cheese
- Optional: sliced jalapeños or green onions
Preheat oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
Layer biscuits into the dish, pressing to form a crust. Prebake for 8–10 minutes until slightly puffed.
Cook beef in a skillet over medium heat until browned. Drain excess fat. Add onion, bell pepper, taco seasoning, and water. Simmer until thickened.
Mix creamy layer in a bowl: sour cream, mayo, cheese, and green chilies. Stir until smooth.
Layer the casserole: spread beef over the biscuit crust, then top with creamy mixture, and finish with shredded cheese.
Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
Rest for 5 minutes before serving. Garnish with sliced jalapeños or green onions if desired.
