Ingredients
  

  • Biscuit Layer:
  • 1 can 16 oz refrigerated biscuit dough
  • Beef Layer:
  • 1 lb ground beef
  • 1 medium yellow onion diced
  • 1 bell pepper red or green, chopped
  • 1 packet taco seasoning
  • ½ cup water
  • Creamy Layer:
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 can 4 oz diced green chilies (optional)
  • Toppings:
  • cups shredded cheddar or Mexican blend cheese
  • Optional: sliced jalapeños or green onions

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
  • Layer biscuits into the dish, pressing to form a crust. Prebake for 8–10 minutes until slightly puffed.
  • Cook beef in a skillet over medium heat until browned. Drain excess fat. Add onion, bell pepper, taco seasoning, and water. Simmer until thickened.
  • Mix creamy layer in a bowl: sour cream, mayo, cheese, and green chilies. Stir until smooth.
  • Layer the casserole: spread beef over the biscuit crust, then top with creamy mixture, and finish with shredded cheese.
  • Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
  • Rest for 5 minutes before serving. Garnish with sliced jalapeños or green onions if desired.

Notes

  • Want a little extra heat? Add cayenne pepper or hot sauce to the beef.
  • For a vegetarian option, swap beef for black beans and corn.
