Ingredients
  

  • 1 cup rolled oats gluten-free if needed
  • ½ cup almond butter or sunflower seed butter for nut-free
  • ¼ cup vanilla plant-based protein powder
  • 3 tbsp maple syrup or honey
  • Zest of 1 lemon + 2 tbsp lemon juice
  • ½ cup unsweetened shredded coconut + extra for coating

Instructions
 

  • Blend the base: In a food processor, pulse rolled oats into a coarse flour. Add almond butter, protein powder, maple syrup, lemon zest, and lemon juice. Blend until sticky.
  • Mix in coconut: Fold shredded coconut into the dough by hand.
  • Shape the balls: Scoop 1-tbsp portions and roll into balls. Coat with extra shredded coconut.
  • Chill: Refrigerate for 30 minutes to firm up.

Notes

  • Substitutions: Use sunflower seed butter for nut-free. Honey works for non-vegan.
  • Storage: Keep refrigerated for 2 weeks or freeze for 3 months.
